
Petite Pea shared this recipe for zucchini fritters with garlic-lemon-yogurt sauce on Jenny in the Morning on 92.9 ‘The Mountain’.
Makes 4-6 servings.

Zucchini Fritters:
- 1 medium zucchini, shredded
- 1/4 cup flour
- 2 eggs
- 1/2 cup sliced green onions
- 1/4 cup fresh mint or 1 tbsp. dried mint
- 1 tsp. salt
- 2 tbsp. canola oil for frying
Garlic-Lemon-Yogurt Sauce:
In a blender mix together:
- 2 cloves garlic
- 1/4 teaspoon salt
- 2 tablespoons fresh lemon juice
- 1 cup plain yogurt
Directions:
- In a mixing bowl, stir together the zucchini, flour, eggs, green onions, mint and salt.
- In a non-stick pan heat the canola oil. Drop one tablespoonful zucchini mixture into the hot oil.
- Fry both sides of the patties until golden brown, about 2-3 minutes for each side.
- Repeat until all the mixture is used.
- Serve at room temperature with garlic-lemon-yogurt sauce.
