Petite Pea shared this recipe for zucchini fritters with garlic-lemon-yogurt sauce on Jenny in the Morning on 92.9 ‘The Mountain’.

Makes 4-6 servings.

Zucchini Fritters:
  • 1 medium zucchini, shredded
  • 1/4 cup flour
  • 2 eggs
  • 1/2 cup sliced green onions
  • 1/4 cup fresh mint or 1 tbsp. dried mint
  • 1 tsp. salt
  • 2 tbsp. canola oil for frying
Garlic-Lemon-Yogurt Sauce:

In a blender mix together:

  • 2 cloves garlic
  • 1/4 teaspoon salt
  • 2 tablespoons fresh lemon juice
  • 1 cup plain yogurt
Directions:
  • In a mixing bowl, stir together the zucchini, flour, eggs, green onions, mint and salt.
  • In a non-stick pan heat the canola oil. Drop one tablespoonful zucchini mixture into the hot oil.
  • Fry both sides of the patties until golden brown, about 2-3 minutes for each side.
  • Repeat until all the mixture is used.
  • Serve at room temperature with garlic-lemon-yogurt sauce.
